Riced Cauliflower

 If you're looking for a low-carb yet flavorful alternative to rice for dinner, try out this simple and quick recipe for riced cauliflower. You won't even need the recipe once you watch this short recipe video I put together for you

The exact proportions of ingredients do not matter. 

Instructions

  1. Remove the green leaves but leave the core intact. Chop the cauliflower into 2-inch pieces.
  2. Finely chop a small onion and mince a clove or two of garlic.
  3. Stir fry the onion and garlic in some olive oil in a 12-inch skillet.
  4. In a food processor, pulse the cauliflower into rice sized pieces.
  5. Add the riced cauliflower plus 1/2 cup chicken stock to the skillet. Stir to combine. Cover and let simmer 15 minutes. Uncover and continue cooking until liquid is evaporated.
  6. Stir in optional cooked peas and warm through. Serve.
