Italian Sausage with Peppers and Sweet Onion

Perhaps one of the easiest and most favorite of sandwiches is the sausage. The Germans may have claimed they invented them, but the Italians have made them their own. 

Italian Sausage with Peppers and Sweet Onion

Sausage Selection: This recipe is easy and quick to make and can be scaled up or down to fit your needs. Simply select a good quality raw Italian sausage. Take care not to select anything looks brown and pre-cooked. Many sausages are sold pre-cooked or smoked. For this recipe you need raw Italian sausage. It can be sweet, mild or hot, depending on your taste. I'm using mild in the photos shown here. 

Ingredients
4-6 raw Italian sausage links (see note above)
1 large sweet onion
1 whole green, red or yellow (or combination) bell pepper
1 tablespoon light soy sauce
1/2 teaspoon dried oregano flakes
1/2 teaspoon dried basil flakes
olive oil

Instructions
Heat a non-stick skillet over medium-high heat and spread just a little olive oil in the pan. When the pan is warm, but the oil is not smoking, add the sausages and begin to brown them. While the sausages brown, clean and slice the onion and pepper into 1/2 inch strips. 

Place the onion and pepper in a bowl and toss with a the soy sauce, oregano, basil and just a teaspoon of oil. After the sausages are mostly brown on all sides, check the pan to see how much fat has accumulated. If it is pooling, drain the excess. Add the vegetable mixture to the sausages and toss to combine. Cover and continue cooking until the temperature on an instant read thermometer reaches 175F and the vegetables are tender. Stir periodically. 

Serve on sausage rolls or a plate.
