Pot of Gold Cocktail - Perfect for Spring

Most every spring we make this simple, elegant, and refreshing cocktail. It's perfect for St. Patrick's day celebrations and has just five ingredients.


We use ginger beer to top off the drinks as noted below, but if you can't find that you can use ginger ale. We prefer the ginger beer as it is less sweet. The ginger beer contrasts well with the refreshing flavors of cucumber, elderflower (St. Germain), and mint very nicely. 


Use English cucumbers if you can find them, as they have few and only small seeds. You can substitute the St. Germain with elderflower liqueur or syrup. Serve it up, as shown above, or on the rocks. 

Ingredients (per cocktail)
4  1-inch thick English cucumber slices
    plus 1 slice cut thin for garnish
8 fresh mint leaves
2 ounces vodka
1/2 ounce St. Germain 
1 ounce ginger beer

Instructions
In the bottom of a cocktail shaker, muddle 4 slices of cucumber and 8 mint leaves. Add the vodka and St. Germain and fill with crushed ice. Shake well.

Strain into a cocktail glass (rock or coup), then top with a splash of ginger beer. If you use the cocktail strainer on the shaker, you will have small specs of the mint and cucumber in the drink, which we don't mind. But if you want it to be perfectly strained, use a mesh screen strainer. 

Garnish with a cucumber slice and mint leaf .
