Sausage Hashbrown Bites: Make-Ahead Breakfast or Game-Day Appetizer

These tasty morsels can be used for breakfast along side a cup of yogurt, hard-boiled egg, sous vide egg bites or other favorite breakfast food. I make them ahead and pop a couple in the microwave for 1 minute to rewarm them prior to serving.


These are also good as an appetizer on game day or whenever you’re serving more heavy appetizers perhaps as the only foods. For breakfast I don’t typically serve them with any dipping sauce but a thousand island dressing or a buffalo cream sauce works well when you’re having them as an appetizer. 

This recipe uses Bisquick rather than plain flour, although you can substitute by using the following mixture in place of the 1 1/2 cups of Bisquick called for in the recipe.

Note that you should allow all of the items in the recipe except the hash browns to warm up on the counter for 30-60 minutes before use.  

Substitute for Bisquick
1 1/2 cup all-purpose flour
3 teaspoons baking powder
3/4 teaspoon salt
1 1/2 tablespoons vegetable oil or melted butter


Sausage Hashbrown Bites Ingredients (about 30 pieces)
1 pound ground breakfast sausage, uncooked
8 ounces cream cheese, softened
1 1/2 cups Bisquick
1 1/2 cups cheddar cheese, shredded
4 cups shredded, frozen hash browns

Instructions

Preheat oven to 400F degrees and line 2 baking half-sheets with parchment paper. Set aside.
 
In a medium bowl, combine sausage, cream cheese, Bisquick, cheddar cheese, and mix until well, ideally with a food glove-covered hand. Then add the frozen hashbrowns and combine. This will take a bit of effort as the cold hashbrowns will cause the mixture to tighten and make it hard to mix together. Divide into 1 1/2-inch balls and place on prepared baking sheet with some space between each ball, as they will expand during cooking.
 
Bake until cooked through and browned, about 20-25 minutes, rotating the sheets front to back and upper to lower halfway through baking. Serve with or without a dipping sauce of your choice.
