The best and easiest way to cook bacon is to bake it. First it doesn't require standing at the cooktop being splashed with hot bacon fat. Second and perhaps most importantly, it cooks more evenly. When part of the bacon is done all of it is done without the typical raw or burned spots you get when pan frying. Finally, the bacon cooks flat when prepared using this method.
I typically prepare a pound of thick cut, quality bacon. This fits onto one half-sheet, the typical baking sheet. Line a rimmed baking sheet with foil that cover the rims of the sheet. Pre-heat the oven to 400F. I use the convention bake setting, but this is not required if you do not have it. Place the bacon in a single layer on the baking sheet. Some minor overlapping is okay.
Place in the oven, and rotate pan front to back halfway through baking. Thin bacon takes about 8-10 minutes total. Thick bacon takes 15-20 minutes total.
Transfer bacon to paper towel-lined plate with tongs. Dab up excess fat with another paper towel and serve. Reserve rendered baking fat for future cooking or discard.
