Beer Marinated Pork Chops with Onion Beer Compote

For some reason pork and beer just go very well together. In this recipe I use a light summer ale for both the pork marinade and the onions you serve on top.




As usual, I prefer a bone-in pork chop for their superior flavor and juiciness, but if you must you can use boneless. Take care not to overcook if you do. Thankfully the beer marinade and onion compote make even poor quality pork chops taste good and stay moist.

Today I'm using the Leinenkugel's Summer Shandy as the beer, but any light fruity beer will do. The recipe is simple but the longer you can marinate the pork chops, the better they will be.

Ingredients

Pork Chops
1/3 cup soy sauce
1 bottle of summer ale (beer)
2 tablespoons brown sugar
1 teaspoon ginger (powdered or freshly grated)
4-6 pork chops (bone in preferred)

Instructions
Combine the marinade ingredients. Place pork chops in a baking pan or zipper locked storage bag. Add the marinade and refrigerate, 8-24 hours, turning occasionally.

Grill about 6 minutes per side, depending on thickness of pork chops until medium-well about 160F - 165F degrees. Top with prepared onion compote (below) and serve.

Onion Compote
1 ounce butter
1 large sweet onion
8 ounces summer ale (beer)
1-2 teaspoons sugar
Pinch of salt and pepper

Instructions
Melt butter in a sauce pan. Add the onions and cook until tender, about 5 minutes stirring regularly. Add 6 ounces of the beer, sugar, salt and pepper. Stir to combine. Cook approximately 16-18 minutes over medium-high heat until the beer is mostly evaporated and the onions are starting to lightly brown. Add the remaining beer and simmer gently for another 2-3 minutes. Serve warm over pork chops.
